The Turkey-Roasting method

I do not stuff the turkey for roasting-I find cooking the stuffing to the right temperature without overcooking the turkey is really hard. I cook the stuffing in a different baking dish. If you do stuff the bird, test the temperature of the stuffing with a thermometer, and bake the stuffing by itself to temperature.
You may also heat the prepared stuffing in the microwave on high 6-8 minutes until it reaches 120-130 degrees and then stuff it into the turkey to roast.
Preheat the oven to 500 degrees. Place the rinsed and dried bird BREAST SIDE DOWN on a roasting rack set into a roasting pan. Melt 1 stick of unsalted butter and 2 cups of low sodium chicken broth in a small saucepan. Roast the bird for 20 minutes and without opening the oven door, reduce the heat to 325 degrees. Begin basting with the butter mixture every 20 minutes. Roast until the breast meat registers 165 degrees on an instant read thermometer. Remove the turkey from the oven and FLIP it over. Put back in the oven and roast until the thickest part of the thigh registers 170 degrees Remove from oven and let rest for 30 minutes. Proceed with turkey sauce while turkey rests.
