French Onion Soup
Ingredients
2 lbs beef bones
6 onions, halved and sliced 1/4" thick
4 Tblsp unsalted butter, melted
Salt and pepper
1 Tblsp brown sugar
1 tsp minced fresh thyme or 1/4 tsp dried
5 Tblsp all purpose flour
3/4 cup apple butter
3/4 cup dry sherry
1/4 cup soy sauce
2 cups low sodium chicken broth
2 cups beef broth
1 24" French baguette, cut into 1/2" clices
2 1/2 cups shredded Gruyere cheese, about 10 ounces
1. Arrange beef bones on a paper towel lined plate and microwave until well browned, 8-10 minutes
2. Add onions, butter, 1 tsp salt, 1 tsp pepper, sugar and thyme to slow cooker. Whisk flour, apple butter, sherry and soy sauce together in bowl until smooth, then stir into slow cooker. nestle microwaved bones into slow cooker. Cover and cook until onions are softened and deep golden brown, 8-12 hours on high
3. Discard beef bones. Bring chicken broth and beef broth to boil in covered saucepan over high heat, then stir into slow cooker. let soup sit until heated through, about 5 minutes. Season with salt and pepper
4. just before serving, position rack 6" from broiler element and heat broiler. Lay bread on baking sheet and broil until golden brown on both sides, about 2 minutes per side. Sprinkle cheese over one side of bread and continue to broil until melted and bubbly. Ladle soup into serving bowls and top with broiled cheese bread.
