Scampi Fra Diavolo3 Tblsp butter, divided 1/3 cup Panko breadcrumbs 1/2 cup fresh parsley, chopped 1 1/4 lbs shrimp(peeled and veined) 1 1/2 cups thinly sliced red onion 5 garlic cloves, minced 1/2 tsp crushed red pepper flakes 2/3 cup dry white wine Melt 1 Tblsp butter in a skillet, add panko and toast. Remove to a mixing bowl and mix with 2 Tblsp parsley. Wipe skillet clean, sprinkle shrimp with salt and pepper. Melt 2 Tblsp of butter, add onion and saute over high heat. Stir in garlic and shrimp and red pepper flakes and saute 1-2 minutes. Add white wine and cook for 2-3 minutes. Stir in remaining parsley, remove from heat and sprinkle with panko crumbs.
