Mahi-Mahi with Brown sugar soy glazePreheat oven to 200 6 scallions,sliced 3 Tblsp packed brown sugar 2 1/2 Tblsp reduced sodium soy sauce 3 Tblsp lemon juice 4 6 ounce fish filets 1/2 tsp salt 1 1/2 Tblsp canola oil(or vegetable) Cut white and pale green parts of scallions into 2" pieces. Slice enough of the dark green parts to equal 3 Tblsp. Stir together brown sugar, soy sauce and lemon. Sprinkle fish with salt. Heat a skillet and add the oil. Saute fish for 2 minutes on each side. Add soy sauce mixture and simmer for 3 minutes. Add scallions and any juice from fish and simmer for 5 minutes. Serve
