Greek shrimp scampi1 Tsp of olive oil 3 garlic cloves, minced 3 (28 oz) canned whole tomatoes, drained and chopped 1/2 cup chopped parsley, divided 1 1/4 lbs shrimp(raw, shelled and deveined) 1 cup crumbled Feta cheese 2 Tblsp lemon juice 1/2 tsp pepper
Preheat oven to 400 Heat the oil in a dutch oven, add garlic and saute for 1 minute(do not burn the garlic, it will be bitter). Add tomatoes, 1/4 cup parsley, reduce heat to medium/low and simmer for 10 minutes. Add shrimp and simmer for 5 minutes. Pour into a 9X13 baking dish, sprinkle with cheese and bake 10 minutes. Remove pan from oven and sprinkle with lemon juice and 1/4 cup parsley and serve. and pepper and serve
