Fish Chowder1 large onion, diced 1 cup chopped celery 1 large shredded carrot 1 stick butter(or equivalent of Smart Balance original) 4 boxes reduced sodium Swanson's chicken broth 1/4 cup flour 1 lb chopped haddock 1 tsp dried thyme 1 teaspoon salt 1 tsp pepper 1 cup half and half cream(fat free ok to use)
Saute in a dutch oven the stick of butter, carrot and onion for 5 minutes. Stir in 1/4 cup of flour and cook for 2 minutes. Gradually add the chicken broth, cream,chopped haddock, thyme and salt and pepper. Cook on medium heat for 10 minutes. Be careful not to boil. Serve
