Spinach Souffle1 10 oz package frozen, chopped spinach 2 Tblsps butter 1 medium onion, chopped 2 minced garlic cloves 3 large eggs 2 Tblsp flour 1/2 tsp salt 1/2 tsp pepper 1/4 tsp nutmeg 1 cup milk(skim, 1%, 2% or whole ok) 1 cup grated Parmesan cheese
Preheat oven to 350 Squeeze spinach to remove as much water as possible. Melt butter in large skillet, add onion and garlic and saute for 5 minutes. Stir in spinach and remove from heat and cool. In a bowl whisk eggs, flour, salt, pepper, nutmeg. Whisk in milk and Parmesan cheese. Stir in spinach, pour into an 8X8 baking dish and bake for 30-35 minutes.
