Spinach PieIngredients Preheat oven to 350 1 10 ounce package frozen chopped spinach squeezed dry 1 Tblsp fresh lemon juice 1/8 tsp nutmeg 2 Tblsp fresh chopped parsley 1 tsp dried tarragon 9" store purchased pie shell, baked 5 mins according to package 1/2 cup feta cheese, crumbled 4 eggs 3/4 c cream or condensed non fat skim milk 1/2 c plain yogurt (Greek yogurt is the best for flavor) Combine spinach with nutmeg, tarragon, lemon juice salt and pepper and parsley. place in pie shell and sprinkle with feta cheese. Beat the eggs lightly with cream and yogurt, pour over cheese and bake for 30 mins
