Farfalle PastaSausage and Tomato Cream Sauce
2 Tblsp olive oil 1 lb sweet sausage, casings removed(turkey or chicken sausage may be substituted) 1/2 tsp crushed red pepper 1 cup chopped onion 2 garlic cloves, 1 28 oz can crushed tomatoes 1/2 cup whipping cream (or 1/2 cup fat free half and half--the sauce won't be as creamy, but the calorie count is much less) 1 lb farfalle pasta 1/2 cup grated parmesan cheese
Heat 6 quarts of salted water to boiling and cook the pasta. Meanwhile,heat the olive oil in a skillet and saute the onion until softened, then add the sausage, red pepper and garlic and cook unitl the sausage is browned and no longer pink(do not overcook if using chicken or turkey sausage). Add the tomatoes and cream to the skillet and simmer at a lively bubble for 2-3 minutes. If your skillet is big enough, add pasta to sauce, sprinkle with cheese and mix. Otherwise, add the sauce to the pasta in the large pot, and continue as above. Serve
