Parmesan French Toast with Roasted TomatoesPreheat oven to 450 Ingredients 2 pints grape tomatoes, cut in half 6 garlic cloves, sliced thin 6 Tblsp olive oil 2 Tblsp fresh basil, chopped 3 large eggs 2 cups whole milk 1/4 cup all purpose flour 1/4 cup grated parmesan plus 2 cups shredded Parmesan cheese 8 (3/4") slices, Italian bread 1. Toss tomatoes and garlic with 2 Tblsp oil in bowl and season with salt and pepper. Arrange tomatoes cut side up on rimmed baking sheet. Roast until skins begin to brown on bottom, about 20 mins. Transfer to a bowl and toss with basil. 2. Whisk eggs in shallow dish with milk, flour, grated cheese,1/4 tsp salt, and 1/4 tsp pepper. Place shredded cheese in second shallow dish. Soak bread, 4 slices at a time, in milk mixture for 5 mins, flipping bread halfway through. One at a time, shake off excess, and dredge in shredded cheese, pressing to adhere. 3. Heat 2 Tblsp oil in large non-stick skillet over medium heat until the oil is shimmering. Cook 4 slices of bread until golden and crisp, 2-3 mins per side. Transfer to a platter and tent loosely with foil. Repeat cooking with remaining oil and bread. Serve with roasted tomatoes
