Baked EnchilladasPreheat oven to 350 Ingredients 1 package tortilla 1 jalapeno pepper, chopped, seeds removed 10-15 black olives(optional) 1 1/2 c shredded jack and cheddar cheese 1 large can plum tomatoes 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 medium onion, chopped 1 package meatloaf mix Place tomatoes, jalapeno and cumin in blender and blend until smooth. Transfer to a saucepan and cook uncovered for 10 mins. In a skillet, saute meat and onion season with salt and pepper and more garlic powder and cumin if needed. Place meat-onion mixture in a bowl and add 1/2 shredded cheese and olives if using and combine. Spread some of the sauce in an oblong baking dish Place a few tablespoons of the meat mixture in the the center of each tortilla, roll and place in pan seam side down. Arrange all of the tortillas in the pan, cover with the remaining sauce. Top with remaining cheese and olives. Bake for 10-15 mins until bubbly.
