Blue velvet cupcakes

2 cups sugar 2 sticks of butter, room temp 2 eggs 1 Tblsp cocoa powder 2 ounces blue food coloring 2 1/2 cups cake flour 1 tsp salt 1 cup buttermilk 1 tsp vanilla extract 1/2 tsp baking soda 1 Tblsp vinegar
1. Preheat oven to 350 Prepare cupcake tins greased or use liners 2. In a mixing bowl, cream the sugar and butter, mix until light and fluffy. 3. Add eggs 1 at a time and mix well after each addition. Mix together cocoa and food coloring and add to sugar mixture, mix well. 4. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla 5. In a small bowl combine baking soda and vinegar and add to mixture. 6. Divide evenly in cupcake tins (makes 24) and bake 18-20 minutes until a toothpick inserted in center comes out clean. Remove from pans after 5 minutes and cool
ICING 1 8 ounce package cream cheese 1 stick of butter, softened 1 cup Fluff 1 (1 pound) box confectioner's sugar Blend cream cheese and butter together, add marshmallow Fluff and sugar and blend until smooth
