Quick Chicken and Artichokes8 chicken thighs 12 Ounce jar of marinated artichokes, drained and quartered 3 Tblsps olive oil 2 Tblsps fresh flat leaf parsley, chopped(or 1 tsp dried) 2-3 Tblsps grated parmesan cheese 1 tsp salt 1/2 tsp pepper
Preheat broiler for 15 minutes. In a bowl, toss chicken with with artichokes, 3 Tblsp olive oil, salt, pepper and cheese. Let stand at least 10 minutes. Place chicken on a broiling pan and broil for 10-15 minutes on each side until juices run clear when pierced with a fork. Remove from broiler, place on a platter and tent to keep warm. Pour sauce from broiler pan into small saucepan and cook over high heat for 1 minute. Pour over chicken and serve
