Greek Lemon ChickenPreheat oven to 400 Ingredients 2 tsp grated lemon zest 1/4 c fresh lemon juice 2 tsp olive oil 4 large garlic cloves, minced 3 tsp dried oregano 3/4 tsp salt 1/2 tsp pepper 1 medium bell paper 1 medium red onion 2-3 medium yukon gold potatoes 8 ounces cleaned sliced mushrooms 4 split chicken breasts with bone
1. In a small bowl, combine lemon zest, lemon juice,olive oil, garlic, oregano salt and pepper. Cut potatoes lengthwise into 8 wedges and place in a 9x13 baking pan. 2. Cut red pepper into 1" pieces. Cut onion into wedges. In a medium bowl combine bell pepper, onion and mushrooms in half the lemon mixture, toss to coat. Pour over potatoes. place chicken on top of vegetables and brush with remaining lemon mixture. Bake for 1 hour brushing chicken with juices half way through cooking.
