Pumpkin Muffins

(or apple or banana nut)


You can make the batter the night before and bake in the morning

1 1/2 cups all purpose flour
1/2 Cup sugar
1/2 tsp salt
2 tsp baking powder
1/4 cup Canola oil
1 egg
1/2 cup milk

Combine dry ingredients. Add oil, egg and milk and mix until just blended (Do NOT overmix) Add one of the following fruit fillings. Bake at 400 degrees in greased muffing tins for 20 minutes. Cool in pan for 10 minutes before removing to a wire rack. (12 muffins)

FILLING VARIATIONS


PUMPKIN
1 Cup pumpkin puree
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup chopped walnuts(optional) or 1/2 cup raisins (optional)
Fold pumpkin, spices and nuts or raisins into batter.

APPLE
2 cups apples, diced
1 tsp cinnamon
Topping:
1/2 tsp cinnamon
1/4 cup brown sugar
Fold apples and cinnamon into batter and top with topping mixture.

BANANA NUT
1-2 large very ripe (black) bananas, mashed
1/2 cup chopped walnuts (optional)
Fold bananas and nuts into batter
